El Trapiche comes to Monteverde in 1948 when Mr. Higinio Santamaría (grandfather of current owner), travels from San Ramon of Alajuela to Monteverde. The journey was on an ox car, to the area now known as Santa Elena and lasted about 15 days, then installs itself and begins to work regularly.

Approximately 13 years after the arrival of El Trapiche to Monteverde, Juan Santamaria Campos (father of current owner) creates a partnership to buy a diesel-powered mill, but not until nearly 28 years after the current owner Juan de Dios Santamaría Hidalgo returns along with his family and it keeps coming back operation after several years of being unused.

The idea of opening the doors of El Trapiche to tourism sector, was founded with the aim of showing foreign and domestic visitors a representative of Costa Rican culture where you can see, not a big sugar production instead a place where shown visitors the process of extracting the sugar cane and the process of growing coffee in a educational and cultural tour, which began in the year 2005.
